6 group head Synesso, Syphon and Clover
Located on the intersection of Stanley St and Oxford St in Collingwood, Proud Mary is the new project of Nolan from Liar Liar in Hawthorn.
The coffee here is from Five Senses and like most cafes nowadays, there is a range of blends and single origins. It's worth noting here, that their machine is a custom built 6 group head Synesso, with 3 steam wands including the middle one that is operated by foot! They also have a Clover and a Syphon bar - they are serious about coffee!
The house blend (unsure of the name) in a milk based drink had flavour profiles of nuts, mocha and slight acidity. It was well balanced and the extraction/milk was spot on (as you'd expect from Nolan!). A guatamalean coffee through the Syphon was also pleasant, however, some may not be partial to the light flavour profiles of a syphon coffee compared to the more concentrated espresso based drinks.
Food here is also excellent. They do breakfast and lunch, with a changing menu. Their Asian duck salad was vibrant, tangy with a bit of spice. The open moroccan souvlaki was also a winner, coupled with tzatziki. They also bake their own muffins and slices.
Definitely worth the trip if you're anywhere in Melbourne!!

Pretty good
Ok, people are going to hate me for this, but I have to say I wan't overly impressed with Proud Mary.
I had a double ristretto and latte. Ristretto was pretty good, milk based was ok. I mean, it was good, but I've been spoilt now. There are some crackingly good coffee spots in Melburn now, so anything less than awesome, seems, well, not awesome. Having said that, however, doesn't negate the fact Proud Mary makes good coffee. It might have just been an off shot, or even just me. Check the crowds at out weekends, clearly they do it right.
The avocado and corn mash I had was ok, but not off the charts.
So, if you're in the area and can get a seat, check it out.

More than just espresso
Give this place a go if you want to go beyond espresso based coffee. The clover machine is my personal fab.

Delciously flavoursome

Worth the wait
Was a 15minute wait to get a seat, but was well worth it. Amazing coffee, I would rate the coffee a 5/5 easily. The hash breakky I had was real nice but a bit oily. Hence the 4/5 rating. I would of liked more breakfast options rather than the "make your own" style... Overall, very nice!
